If you can’t beat it, eat it! Young Japanese Knotweed (Reynoutria japonica) is great to lacto-ferment into small olive-like ringlets. 4% salt brine and some back-slop of brine from an old ferment does the trick! Always remember to discard of your remains NOT in the compost but rather in the regular garbage, or better yet - burn it! 🔥 It is a very successful spreader and can take over your garden, yard or property. You most likely don’t want to have one of these growing through your living room!
